海の向こうのフランスでは、3.5トンの大麻が押収されたそうです。その量の多さに圧倒されてしまいますが、先ごろ日本でも、同じような事件がありましたね。ただこっちのほうは押収量1.5グラムと控えめですが・・・。
ちまたでカリスマシェフなどと言われているとかいう、有名イタリア料理店の総料理長・山田宏巳氏が、その当人です。
今回のことで、レストランのお客さんの入りもさぞかし減ったことでしょう・・・、と思いきや、その後の新聞情報などによると、「売り上げには大きな影響はなく、目だった予約キャンセルも無い模様」とのことです。例えば、今の日本ハムにとって、新庄は欠かせない人物です。でも、「レストランテ・ヒロ」にとっては、総料理長が警察の厄介になったところで、大きな影響はない・・・。
きっと彼は、塀の向こうで、お店の今後のことを案じていることでしょう、「ああ・・・、俺がいなくなって、店は大丈夫なのだろうか？」
しかしお店は、彼の心配をよそに、何事もなかったかのように営業している・・・。
カリスマシェフって、いったい何なのだろう？
ウディ･アレンの映画に、「さよならさよならハリウッド」というのがあります。
「かつて二度のアカデミー賞に輝いたが、今となっては落ち目の老映画監督が、ハリウッドからの新作監督のオファーを受け、悪戦苦闘しているうちに原因不明の病気で失明してしまう。彼は目が見えないことを内緒で撮影に望み、なんと映画は完成してしまう」という内容です。
山田宏巳なる人物って、どう評価されるべき人なんですかねえ？
トップが不在となっても経営がぐらつかない、そういう強い組織を作り上げた立派なリーダーとして見るべきなのか、それとも、カリスマシェフともてはやされながらも実は何の影響力も無かった裸の王様なのか・・・。
そこで、総料理長不在の今こそ、山田氏のもとで働いてこられたシェフの方々に、是非冷静に考えてほしいことがあります。例えば「黒」であっても、山田料理長が「白」といったら、「白」になったりしなかったでしょうか？ご自身が考案した新メニューが、気がついたら山田氏考案として、メニューに並んだりしてなかったでしょうか？
そんなこと無いというようでしたら、それでいいのですが、もし「レストランテ・ヒロ」に、悪しき権威主義がはびこっていて、そのもとで泣いている才能ある若い料理人が居るとしたら・・・。
そういう方には、是非この機会に目を覚ましてほしいものです。
