水産資源の多くは、世界中がひとつにつながった「海」という、生態系の中で生産（獲得）されます。養殖されている魚などもそれなりにありますが、全体の生産（獲得）から見れば、まだ少ないと言えるでしょう。
ベトナムで、漁業資源を守るために漁船の数を半分近くに削減する計画ということですが、確かに、水産資源も、きちんと再生産される環境を整えてあげないと、石油などのエネルギー資源同様枯渇してしまいます。
もちろん、「水資源」も同様です。地球上の「水」の総量は、基本的に一定ですが、資源として活用するためには、地下水・湖・川などのように、まとまっていなければ、ならないので、それらを使い果たしてしまうと、場合によっては、数百年・数千年・数万年・数百万年の間、水不足に苦しむことになります。
ところで、世界三大珍味のひとつで、もっとも貴重な水産資源でもあるキャビアの値段が高騰しています。
「ベルｰガ」という、最高品種の＜お徳用＞１．８キログラム缶の価格は、現在３００万円です。
１キログラムあたり、約１６７万円ですから、現在の１キログラムあたり２５０万円程度の金価格に到達するのは、それほど遠くない将来でしょう。もちろん、数年前の金価格は十分上回っています。
よく、歴史の本などで、「古代では、同じ重さの岩塩と金が同価格」だったなどと書いてあったり、コロンブスが新大陸を目指したのも金と等しい価値があったコショウを求めてのことだったと聞いた事があります。
我々は、「チョウザメの卵が金と等しい価値を持つ」時代を経験しつつあるわけです。
キャビアは、かなり昔から高級な食材だったわけですが、急騰が始まったのは、ペレストロイカ・ソ連崩壊以降です。それ以降、漁場の管理が出来なくなり、乱獲が始まったため、極端に漁獲高が減りました。それゆえ、いまだに、毎年ものすごい勢いで価格が上昇しています。
救いは、日本の高知で「キャビアの養殖」に成功し、既に＜リーズナブル＞な価格で販売されていることです。一般のチョウザメが、卵を産むまでには生まれてから２０年以上の年月が必要だそうですが、高知の「よさこい」キャビアは、７～８年で大丈夫だそうです。
