牛乳について思うこと

最近、牛乳絡みの仕事を良くしているんですが、なかなか面白くて勉強になります。自分はガキのころから牛乳が嫌いで、給食の時なんかかなり辛い思いをした口なんですが……いや、あんまり飲まなくて良かったんじゃないかと思うようになりました。
そもそも、牛乳には、前々から疑問だったことがいっぱいありました。
まず、牛乳って完全食品みたいに教え込まれてきたけど、それ以前（牛乳が庶民の口によく入るようになったのは戦後）は、みんな骨粗鬆症でみんなボキボキ骨が折れていたのか？
もちろん、んなわけない。
牛乳は、カルシウムを摂取するには良くない代物です。カルシウムと結合してしまうリンがかなり入っているので、無意味なんです。小魚や、小松菜・パセリなんか食うのが一番カルシウム補給になります。
さらには、そもそもカルシウムを摂取すれば骨が丈夫になるなんてことすらない。むしろ一日平均８０７mg以上摂取する米国人より、１５mgしかカルシウムを取らない台湾人や８mgしか取ってないガーナ人のほうが骨は強いのではないでしょうか。少なくともアメリカは骨粗鬆症天国であることにはまちがはないです。
人間と近似の動物を考えても、葉っぱが常食のゴリラだって、かなり骨強いっぽいし。
全然近似でないけど、カルシウムでできた巨大な甲羅を持つリクガメの多くだって草食性です。重要なのは、カルシウムとリンの比率で、どんな生き物でもこれを誤ると、いくらカルシウムを摂ってもうまく吸収されません。
しかも、私は牛乳飲むと腹が緩くなるんですよね。これは乳糖を分解する酵素（ラクターゼ）が身体に少ないため。乳糖不耐症といって、人類の多くはこのケがあるそうです。
酒飲めないのと似たようなもんです。あちらは、アセトアルデヒドを分解する酵素がないから、調子が悪くなっちゃうわけですが。
それから、日本の牛乳は、高温殺菌するので、さらに有用なビタミンは壊れるし、乳酸菌などの善玉菌まで死んでしまっている。
かといって、無殺菌の牛乳にもひとくせあって、牛の白血病が感染する危険性を訴えている学者が多いとのこと。人間では確認されていないけれど、チンパンジーでは確認されているそうで。
低温殺菌なら、まだマシですが、どちらにせよ、無理して飲むような代物かというと疑問が残りますね。極論ですが、牛乳はコレステロールの原因物質、単なる飽和脂肪酸のカタマリにしか過ぎないのではという感すらあります。
もちろん飲まないにこしたことはないが、中にはうまい牛乳もあります。自然放牧で脂肪分を砕いていない（ノンホモジナイズ）の牛乳なんか、クリームみたいですね。そういう良質の牛乳を、ごく少量飲むくらいが一番いいのではないかと思います。
まあ、個人的にはハーゲンダッツ級のバニラアイスを週に一度くらい食う程度でいいんではないかと。実際、私はそのくらいにしてますね。
まさに自分の中では、「牛乳神話崩壊」という感じです。
以前、洗浄剤について調べたときも同じように「清潔神話の崩壊」を感じました。
なんで毎日毎日、執拗に髪や身体を洗浄剤であらわなければならないのか。それで、清潔で健康になる？ 肌が良くなる？ 抜け毛が治まる？
毎日、身体や髪を洗浄剤で洗っていなかった時の人の肌はぼろぼろで、薄毛だらけだったとでもいうのか？
んなこたない。
そう、それは売らんがための文句でしかなく、本当は
んなことたないんですよね。
ps
あ、引用記事について触れるの忘れてました。「人工乳」ってなんですかね。
生乳７０％の加工乳、生乳２０％程度の乳飲料のこと？ あるいは還元乳（脱脂粉乳）のことでしょうか？
うーん。なんだかこの記事だけではさっぱりですね。気になるけど。
調べてみたいです。
